With just a few simple tricks, you can take any box of brownie mix and turn it into something that tastes homemade, rich, and bakery-worthy. The best part? No one will ever know it started from a box.
Ingredients You’ll Need
Start with your favorite box of brownie mix and prepare it according to the package directions—with a few easy upgrades:
- Milk (instead of water)
- Melted butter (instead of vegetable oil)
- Eggs (as called for on the box)
- Vanilla extract
- Instant coffee (optional, but recommended for deeper chocolate flavor)
Step 1: Swap the Water for Milk
Replace the water called for on the box with milk instead. This simple swap makes the brownies richer, fudgier, and more flavorful. You can use whole milk, evaporated milk, buttermilk, or even coconut milk depending on what you like or have on hand.
Step 2: Use Melted Butter Instead of Oil
Swap the vegetable oil for melted butter. Real butter adds a deeper, more homemade flavor and gives the brownies a richer texture that tastes less “boxed” and more bakery-style.
Step 3: Add Vanilla + Instant Coffee (Optional but Powerful)

Better Boxed Brownies
Ingredients
- 1 box brownie mix (usually between 16 to 17oz packages)
- 2 TBS milk
- 2 eggs
- ½ cup melted butter
- 1 TBS instant coffee (optional)
- 1 TBS vanilla extract
Instructions
- Preheat oven to 350F and prepare pan by greasing bottom and sides. If making cupcakes, spray cupcake liners with cooking spray.
- In a large bowl, combine brownie mix, eggs, milk, melted butter, coffee crystals, and vanilla. Stir just until moist.
- Pour into prepared pan and bake according to box directions. For cupcakes, bake at 350F for about 20-25 minutes.
